Serves 4
Ingredients
1 red chilli, deseeded and finely chopped
4 tsp tamari
1 tbsp ginger, freshly grated
1 garlic clove, crushed
1 tbsp sesame oil
1 tbsp coconut oil
2 carrots, cut into matchsticks
2 courgettes, julienned, or green beans, sliced
1 red pepper, sliced
4 chicken breasts, cut into 1cm strips
2 spring onions
100g cashews
4 tbsp fresh coriander, chopped
2 tbsp sesame seeds
Salt and pepper
Method
1. Mix the chilli with the tamari, ginger, garlic and sesame oil to create the chilli sauce.
2. Put the coconut oil into a large pan on a high heat.
Add the carrots, courgettes / green beans and pepper and stir fry for a few minutes. Add 1 tbsp of the chilli sauce, stirring well.
3. Add the chicken, spring onions, cashews and the rest of the sauce. Stir for 5-7 minutes until the chicken is cooked. Taste and season if required.
4. Serve topped with fresh coriander and sesame seeds.
5. Goes well with a portion of cauliflower rice.
